Autumn Kaiseki

The setting sun of Busena is likened to autumn leaves, the deepening autumn richly expressed. We invite you to join us for autumn with all five senses by incorporating local and Western ingredients into a variety of seasonal tastes such as matsutake mushrooms, abalone mushrooms, chestnuts, ginkgo nuts, and barracuda. The chef's heartfelt appetizer features a hot pot with duck, foie gras, and Kujo green onions served in an elegant soup stock. Both traditional dishes and new flavors are the real thrill of the Mahae style.
