For the hors d'oeuvre, we combined Okinawan prawns in season with potato Genovese pasta to create a spring-like dish with elegant colors. For the main dish, we have aged Charolais beef, a premium French cut. After seven weeks of aging to further intensify the rich flavor, the mellow aged aroma, the real pleasure of the dish, is complemented by a delectable morel mushroom sauce.
