Menu d’été Fascinant

The new course meal for early summer embodies a summer table in Provence, Southern France featuring seasonal Okinawan ingredients in dishes including Shellfish Ravioli with a caviar cream accented by shikuwasa. The Foie Gras Mosaic is a fascinating gem combining the rich taste of dried mango and pineapple with foie gras. For the fish course, the Lobster Fricassee is refreshingly crafted with a sauce containing artichokes and seasonal vegetables topped with herb oil. The main meat dish is a lamb roti, served with an herb-scented jus d’agneau sauce.
