Koyo Kaiseki

A vibrant autumn dusk is painted on each serving dish using an abundance of seasonal produce. For the appetizer, an assortment of simmered dishes unique to the season featuring flame-broiled seasonal fish and barracuda adorned with the scent of magnolia leaves, and a soft-boiled egg conjuring the moon. A soup offering the best of the current season and remnants from the last, with matsutake mushrooms and conger steamed in an earthenware teapot. For the ensuing dish, a duck pot with Kujo scallions in a fragrant soup stock complemented by foie gras.
