The New Year’s course dinner features the full delights of locally sourced ingredients. The first dish is a ballotine in which the rare Okinawan native chicken meets local tiger prawn. This dish is served with a golden hue consommé broth, allowing guests to savor delicacies from both the mountains and the ocean. The next dish is the St. Paul lobster presented in an avant-garde gratiné (gratin) style. The final dish is the Awamori Ice Cream with an intricate, champagne-gold candied nest. The breathtaking presentation and delightful taste will deepen the joy of the season.
