The course meal brought to you under this season's theme of "wind" opens with a cucumber windmill drawing a cool breeze, served with an airy tomato mousse that melts in your mouth. The poêler featuring Okinawan white fish is delivered to your table with sprinkled edible flowers to top off the dish. The Okinawan chicken ballottine marinated with red wine is steamed for a moist texture and served with a red yeast rice vinaigrette sauce. The yogurt sorbet for dessert is served with mint and lemongrass-flavored fruit for a scent of early summer.
