A course menu featuring local Okinawan ingredients grown in the tropical sun to symbolize the seasonal theme of “light” will ensure that your body is well cared for from the inside with the power of nutritious food. The appetizer of lightly roasted tomatoes will help keep your body from cooling down. The Rice Paper Roll of Okinawan Tuna is served with a richly fragrant herb oil and the ethnic-flavored harissa. The Okinawan Char-Grilled Pork Shoulder Loin is served in a beetroot and turmeric sauce that is inspired by the sun and moon and enhances the flavor of the meat. For dessert, relish the mango bavarois served with a sorbet of Okinawan summer vegetables such as wax and bitter gourds. Find yourself mesmerized by the refreshing, melt-in-your-mouth sensation.
