Wellness Cuisine “Aquarelle”

Under the motif of this season's theme of “water,” delicious watercolors (aquarelle*) are painted with an assortment of ingredients from Okinawa. For the appetizer, smoked fresh fish and jelly created using the water from the vegetables to retain the water-soluble vitamins. The fish course is completed with homemade tofu sauce featuring seawater off Cape Busena, and for the main dish, Agu Pork Shoulder Loin Stew is tenderized with mineral-rich water and served with Okinawan taro (taimo) puree.
