Following the amuse-bouches, the appetizer of Snow Crab and Avocado Cannelloni is accented with tomato coulis. The fish course of Poêle of Homard Lobster is served with a spicy original Sauce Américaine with cumin and garam masala, and for the main dish, the Poêle of Wagyu Beef Fillet is served with a grainy mustard sauce.
