Spring Selection “Essence”

Atta’s famed homegrown vegetables, herbs, and local produce have sprouted firmly under the southern spring sun. After enjoying the Okinawan tuna mi-cuit to start the meal, you will be treated to snow crab and scallop tartar with a smoky scent of cherry wood. The second appetizer will be a unique presentation of French foie gras terrine made to look like an éclair. The fish dish, a sautéed tilefish and scampi, seasoned with herbs from our house garden. For the main dish, we prepared an Okinawan Wagyu beef filet, accompanied by our homemade fermented garlic and herbs for an added depth of flavor.
