Spring Selection “Impression”

This course invites you to a season of sprouts, beginning with a marinated red grouper fish accented with a dressing made with herbs from our house garden. The colorful seasonal vegetables can also be enjoyed as a salad. The second dish is a pasta with fresh green vegetables and accents of mullet roe. The Grilled Okinawan Eel will be served tableside with consommé sauce. The main dish, Okinawan Wagyu beef cheeks, slowly simmered in a red wine sauce for a flavorful finish. A table wrapped in warmth on a spring evening awaits with steamed vegetables from the house garden.
