Five à la carte dishes showcasing the spiciness, flavor, and aroma of one of Okinawa's traditional vegetables, shima togarashi (island chili pepper) in the unique style of La SIMA. The Okinawan seasoning of koregusu, made by soaking island peppers in Awamori, is added to the Gazpacho to give a mellow flavor. The Pork Rillettes are accented with chopped island peppers, and the Sopa de Mariscos, featuring white fish from Okinawa, has an exquisite garlic aroma with a spiciness of the island peppers. The Garlic Shrimp and Okinawan Spring Chicken Red Al Ajillo are spicy and invigorating with a summery taste.
