Inspired by the idea of sharing and enjoying together, as at a Spanish bar, this set menu offers a complete selection from appetizers through dessert. This spring’s fish dish features locally caught akamachi and soft-shell shrimp, served as Sopa de Mariscos—a seafood soup enriched with the deep essence of shellfish. The meat course presents red wine–braised beef, slowly simmered in Spanish red wine for a rich, rounded flavor, while the paella is prepared La Sima style, highlighting the natural savor of seasonal white asparagus and island pork bacon.
