Verdure~Fresh Greenery, the Arrival of Early Summer~

Centered on carefully selected ingredients from Okinawa, and enriched with herbs harvested from our sister hotel’s farm, this course captures the fresh vitality of early summer. It begins with a tartare of local grouper and seika squid, brightened by lime and aromatic herbs that lift the sea’s delicate flavors. For the main course, savor roasted lamb, finished with herb oil and orange for a beautifully layered fragrance.
