A course dinner that brings together the season’s vegetables and herbs in a gentle expression of summer, paired with carefully selected ingredients. The opening dish, a pressed salmon, layers marinated salmon and sour cream cheese in a delicate millefeuille, finished with eggplant and herbs from our farm. A tomato and paprika sauce adds brightness, enhancing the depth of flavor and bringing the composition into quiet balance.
