Prepared with an abundance of seasonal ingredients, this gozen menu is thoughtfully designed around the progression of flavors—from their first appearance, to peak season, and gentle close—and is partially refreshed each month. The first course features small dishes and appetizers that highlight the season’s character, followed by sashimi, soup, and other carefully composed seasonal dishes in the second course.
