An à la carte menu inspired by traditional regional Spanish cuisine, designed to highlight the natural character of seasonal ingredients and convey the fragrance of spring. A recommended appetizer brings together yellowtail, surf clam, and spring vegetables on a single plate, finished with a refreshing tankan citrus dressing. The red wine–braised beef, slow-cooked until effortlessly tender, offers a rich concentration of flavor and depth. Enjoy it alongside spring vegetables lightly grilled in the Josper oven, completing a dish that is both hearty and refined.
