Led by Chef Kina, a member of Les Disciples d’Auguste Escoffier, one of the highest honors in French gastronomy, this special New Year’s course celebrates the season with artistry and refinement. The warm appetizer, fried squab, reflects the spirit of traditional French cuisine, while the main dish showcases premium Okinawan Wagyu prepared in two styles, accompanied by island burdock crafted in the shape of a kadomatsu, a nod to Japanese tradition. Vegetables and herbs are carefully selected from Our Farm and the fields of Yomitan, offering the fresh flavors of local harvests.
