Harukaze Kaiseki



Using ingredients that reach their peak in spring, this kaiseki expresses the uplifting spirit of the season as greenery and blossoms come to life. The opening course brings together treasures from the mountains and sea, including creative touches from our chef such as tender Wagyu wrapped around Japanese udo. The clear soup is a traditional preparation of mashed green peas, finished in a vivid spring hue. With bamboo shoots, clams, hamaguri, mountain vegetables, and other ingredients that embody the colors and aromas of spring, this kaiseki invites you to savor a moment reserved for this fleeting season.
