Beginning with an appetizer and unfolding toward the main course, this chef’s tasting is defined by the bold artistry of live spiny lobster, live abalone, and exceptional Japanese black wagyu, expertly grilled before you. The abalone is cooked with precise heat to draw out its deep umami and distinctive texture, then finished in Ryutan’s signature herb butter sauce—infused with local Yanbaru herbs and abalone liver for layered richness. Paired with carefully selected awamori or wine, the experience invites you to linger in a moment of refined indulgence.
