Drawing on seasonal ingredients from Okinawa alongside carefully selected produce from France and beyond, Passage vers l’été — A Doorway to Summer reflects nature’s gentle transition from the lingering softness of spring to the verdant height of early summer. The course opens with a light appetizer pairing the delicate sweetness and subtle bitterness of French white asparagus with Okinawan shellfish. As the journey unfolds, aromas deepen and flavors grow more expressive, inviting you to sense the arrival of summer through all five senses.
