Guided by the spirit of Island Time at Busena, this course unfolds through the quiet richness of Okinawa’s sea. Tiger prawns and the day’s catch from nearby waters are prepared with a light touch, allowing their natural character to emerge. A delicate tartare of luminous turban shell, brightened with shikuwasa, brings a gentle freshness reminiscent of a summer breeze. The experience concludes with a carefully selected meat course, chosen in harmony with the season—an unhurried expression of the island’s rhythm and sense of place.
