Tiger prawns and the day’s catch from nearby waters are prepared with a light touch, allowing their natural character to emerge. A delicate tartare of luminous turban shell, brightened with shikuwasa, brings a gentle freshness reminiscent of a summer breeze. The experience concludes with a carefully selected meat course, chosen in harmony with the season—an unhurried expression of the island’s rhythm and sense of place.
