Wakanatsu Kaiseki

Understated and gently evocative, the course offers an early taste of summer—its aromas, colors, and quiet character. Seasonal sea bass, rich with natural depth, is lightly grilled with tomato to introduce a refreshing note of acidity, while summer conger eel is prepared in the traditional ryūgan style, allowing its refined flavor to unfold. Young ayu (sweetfish), a herald of the season, a clear and cooling winter melon soup, and compositions layered in subtle shades of green come together to express the serene arrival of summer.
