The course dinner Biarritz brings together vegetables and herbs from our own farm with the quiet richness of locally grown produce from Yomitan Village, offering a dining experience shaped by its surroundings. In the height of summer, seasonal vegetables and citrus lend a gentle brightness to each dish. A composition of tomato, accompanied by marinated luminous turban shell and abalone with a chilled gazpacho, is followed by fresh fish lightly coated in rice flour and finished with a subtle hint of shikuwasa. Each course unfolds with a sense of balance and ease, reflecting the season’s natural rhythm.
