Details on the exceptional menu
by a MICHELIN Key hotel chef in Corsica, France.

Supervised by Chef Pascal Caillau of Calarossa, four signature dishes from the exclusive dinner presented at the February 2026 dégustation are now offered as à la carte selections. Rooted in classical techniques and reimagined with a contemporary touch, each dish draws out the natural character of its ingredients—from the depth of nuts to the earthiness of root vegetables—while incorporating produce from our own farm. Subtle yet distinct, these expressions carry the essence of the land, inviting a gentle hint of Corsica to linger across the terrace.
