In harmony with the harvest of Our Farm, this seasonal course weaves together summer vegetables and produce from Yomitan Village, offering a dining experience shaped by time and place. The opening dish features Okinawa’s prized agu pork, followed by a fish course gently finished with a Japanese-style broth drawn from bonito and shellfish—an elegant expression of local ingredients and the chef’s understated artistry. For the main course, Okinawan wagyu is complemented by morel mushrooms, foie gras, and truffle, culminating in a quietly luxurious taste of the region.
